Springtime Veggie Bowl for Renewing Energy
Spring is such a lovely season. It’s when flowers are blooming, fresh veggies and leafy greens start to become ripe for the picking, and the weather is blissful and warm. Even the energy shifts from slow and dark to lively and bright! If we had to take a vote, spring would hands down come in a strong second place here at Solstice Sisters (two of the sisters have sensitivities to pollen which comes in droves in the southeast where they live, so fall definitely wins first place for our favorite season!)
Because of the vibrant and lively energy that spring brings, our resident kitchen witch loves to use this time to refresh her home and craft together a magickal meal that honors the return of spring. And we don’t mean some big eggs-travaganza either. This springtime recipe is fit for witches of all experience levels, kitchen witches and non-kitchen witches alike. You won’t need a chef’s hat for this delightfully witchy meal!
Veggie Bowl for Renewing Energy
Start by opening the doors and windows in your home. Try and do this on a clear and warm day when there is a slight breeze. Allow the fresh air to waft through your home, clearing out any stagnant energy. As you’re doing this, you may choose to turn on some uplifting music - something that gets you moving and makes you happy!
What you’ll need:
- ½ cup heavy cream
- 2 Tablespoons of butter
- 2 Tablespoons of cream cheese
- 1 Teaspoon of salt
- 3 Tablespoons of olive oil
- 2 Teaspoons minced garlic
- 3-4 medium stalks of asparagus
- 3 large mushrooms
- 1 medium carrot
- 3-4 broccoli florets
In a small saucepan, begin heating the cream over medium high heat. When the cream starts to bubble, add in the butter, cream cheese, minced garlic, and salt. Slowly stir in a clockwise motion while envisioning the bright, vibrant light of spring swirling into the sauce. Once the butter and cream cheese have melted turn the heat down to low and stir occasionally.
In a separate pan, begin to heat the olive oil over medium-high heat. While it is heating up, begin to chop all the vegetables. As you’re chopping, imagine bright sparks of lively energy infusing into each vegetable piece. Think of all the areas of your life that currently feel stagnant and imagine them being brought back to life, fully renewed.
Once the oil is hot, add all of your chopped veggies to the pan and saute them for around 10-12 minutes, stirring frequently so that the veggies do not burn or stick to the pan.
When the veggies are finished sauteing slowly add in the sauce stirring clockwise, still envisioning the bright, vibrant light of spring swirling into your meal.
Serve yourself a hearty bowl and if the weather is permitting, sit outside in the fresh, spring air while enjoying your veggie bowl!
